Quick Meal Idea - Easy Chicken Souvlaki

This summer has been a busy one!  The family is always on the go to different activities and events, and when it's hot who feels like being trapped in the kitchen?  I sure don't, but I do need to have some quick meals on hand when time is short.  This week I made Easy Chicken Souvlaki, which I think is my hubby's new favorite quick meal.  

This meal couldn't be easier, especially since I used Kirkland Signature frozen chicken filets which are already trimmed and easy to cut into bite sized pieces.  

Ingredients:

1 1/2 pounds chicken breast

4 cloves minced garlic (add more if you love extra garlic flavour)

2 tsp dried oregano

4 tbsp lemon juice

4 tbsp olive oil

1 tsp salt

Mix all of the ingredients together.  Marinate for at least 2 hours in the fridge or if preparing a meal to take to the cottage you can freeze the mixture in The Burger Master (as pictured below).

I don't bother with skewering the chicken, I barbecue it on a pan wrapped in foil or I roast in the toaster oven at 425F.  When cooking you can throw any extra veggies you like onto the tray such as red onions, tomatoes, red peppers etc.  

Because the chicken is in bite size pieces it cooks through in less then 10 minutes (make sure to flip at least once to get the pieces browned on both sides).

During the last few minutes of cooking throw some pitas on the grill to warm them up and to give them a nice crispy exterior. 

Garnish with lettuce, tomato and tzatziki for a satisfying lunch or pair with a Greek salad for dinner.
