Peanut Butter Cups

I am obsessed with peanut butter cups!  This version has only 5 ingredients and is easy to whip up on a Sunday afternoon when a chocolate craving strikes.

Ingredients

Filling:

  • 1/3 cup all natural peanut butter
  • 2 tbsp honey
  • 1 tbsp refined coconut oil

Chocolate coating:

  • 185 g milk or dark chocolate, chopped
  • 1 tbsp refined coconut oil
  • 1 tsp vanilla

Directions

  1. Mix together the peanut butter, oil and honey.  
  2. Using a small cookie scoop or two teaspoons, place a small mound of peanut butter in the middle of each hex section of the Smart Cookie. If the mixture is too runny you can place in the freezer for ten minutes.
  3. Melt the chocolate and oil in a small microwaveable bowl.  Melt on low heat in 30 second intervals.  Once fully melted, add the vanilla and stir until combined.  
  4. Pour the melted chocolate over the peanut butter pieces.  
  5. Lift and bang the Smart Cookie tray on the counter a few times to remove any air bubbles from the chocolate.  
  6. Place the lid on top and refrigerate until solidified (approximately 1 hour).
  7. Remove and enjoy!

Try making other variations with the Smart Cookie.  

White chocolate pistachio and cranberry bark

Melt 225g of white chocolate and pour into the bottom tray of the Smart Cookie.  Sprinkle 1/4 cup pistachios and 1/4 dried cranberries on top.  Seal and refrigerate for 1 hour.  

Dark chocolate cashew bark

Melt 225g of dark chocolate and pour into the bottom tray of the Smart Cookie.  Sprinkle 1/2 cup cashews on top.  Seal and refrigerate for 1 hour.
